Cold Sesame Noodles

This recipe is from the Cornell Cafe at the Morikami Museum in Palm Beach County. Add grated carrot, chopped celery, steamed shrimp or shredded roast chicken if you like. I add the carrot.
 
1 pound linguine noodles
2/3 cup chunky peanut butter
2 cloves garlic, minced
4 tblspns soy sauce
4 tblspns rice vinegar
4 tblspns sugar
2 tsps sesame seeds
 
Cook noodles in a large pot of salted boiling water until al dente. Rinse, drain and refrigerate. Stir together peanut butter, garlic, soy sauce, vinegar and sugar until smooth; sauce will be thick. To serve, toss chilled noodles with room-temperature sauce and garnish with sesame seeds.

Makes 4 to 6 servings
