2 (15 0z.) cans garbanzo beans, drained 6 medium to large garlic cloves Juice of 2 to 3 fresh lemons (6 to 8 Tblspns.) 2 heaping Tblspns. Tahini (sesame paste) 1 ½ tsps salt Olive Oil and Parsley for garnish |
Process beans, garlic and half the lemon juice in a food processor until well-combined, about 1 minute. Add Tahini, salt and remaining lemon juice. Process 1 to 2 minutes more, until smooth, adding ¼ to ½ cup water for desired consistency. Pour into flat dish: drizzle with oil and sprinkle with parsley.
